Banging salad for Autumnal days

The leaves are falling and it's already almost October! This calls for some warming treats to come home to on cold days, que chocolate smores and apple crumble cravings. 

All those puddings can be a little heavy though so a top recipe for a autumnal salad is coming your way...

It's super simple and super tasty

Kale, butternut squash and bacon Autumnal salad 

1. Roast cubed seasonal squash with olive oil, herbs and garlic cloves at 180degrees fan for 15 minutes.

2. Add tomatoes to the roast tin and roast for a further 15 minutes. 

2. Cook some smoked bacon 2-3 rashers sliced in to strips in a large frying pan or wok (smoked bacon is essential to the flavour of this recipe as the fat will be used as flavouring for your leaves).

3. Remove the bacon from the pan and set aside.

4. In the same pan stir fry 3 handfuls of kale with a little water (4 tablespoons) and add chilli flakes to taste. 

5. Combines all of the ingredients in the frying pan and serve in a shallow bowl

6. Sprinkle with some sunflower seeds or any other seed you might like.

7. Enjoy by a warm fire with a glass of Pinot noir.
